With my husband and kids home all day, I’ve been making breakfast, lunch and dinner and some days I feel like a short order cook. I’ve been really enjoying experimenting with new recipes and here are some that are easy and are big crowd pleasers.

This is by far my favorite cookie and they are so easy to make. The ricotta makes them so fluffy and the lemon makes them so refreshing, everyone always asks me to make these. They are the perfect spring or summer dessert. Found here.
Chicken Fajitas

Strawberry Rhubarb Crunch

Everyone in my house loves chicken cutlets and to be able to bake them is easier and healthier. These garlic baked chicken cutlets are so good and easy and you can also add tomato sauce and some mozzarella to make chicken Parmesan. This recipe is here.
